Sweet Jesus Potato Fries

The Business for Hangovers!

I love these babies any time of the week, even more so when you're a hung dog. Sweet potato fries are basically guilt free (well... when you bake them in coconut oil). But if you're craving the indulgent version, swap out the coconut oil for olive oil and fry these babies instead!

  • 1 Sweet Potato
  • Coconut Oil
  • Rosemary, Cinnamon, Paprika, Sea Salt and Pepper

  1. Cut sweet potato into strips. Remember the thinner you go, the crunchier and crispier they get. But don't go too thin, you don't want straw chips. TIP: If you soak the potato overnight, it's heaps EASIER to cut the next day.
  2. Heat up the coconut oil and lather the strips, then marinate with the spices and rosemary.
  3. Bake for 40 mins. Make sure you flip the bad boys half way through.

Eat them with a litre of coconut water in hand and boom, you're on your way to a speedy hung recovery. Another great idea, which I am yet to do, is to bulk marinate them and store in the freezer. This saves you 20 minutes of HANGRY waiting time. So go forth and cure that devil of a hangover!
